I'm using graphite electrodes with the electrolyte as sodium bicarbonate. There's a strange smell that emits from the electrodes. What is that smell, and should I be worried about it?

If it is sharp and pungent, it could be ozone which is formed from electrolyis of oxygen. I wouldn't worry too much about it; just don't take too many whiffs.

It could very well be hydrogen.

Hydrogen is highly flammable. Watch out for sparks or open flames. They can ruin your day.
