My Avonite countertop needs polishing. Is it something we can do ourselves? And how?

Avonite and Corian are similar materials. Mine has lots of small scratches. Would like to polish them out, but don't know how. I know it can be done professionally, but it is quite expensive.

The supplier should have given you a video on the care of the countertops.

If you have a buffer, then you can buff the scratches out. I have a similar product and we use a scotchbrite pad to remove scratches and then something BonAmi to get it further polished. After all this we use a cleaner/polish that can be bought in stores to buff it up to a higher luster.
