They shouldn't. I have done some in books where they do, however.

They shouldn't, not if they're "good quality". But sometimes they do, and that means they weren't written out properly at the beginning by the creator.
The "best" sudoku puzzles are symmetrical and have only one solution which is possible to reach by logic only and not through guessing or trial-and-error.

It is possible (if not enough information is given to limit the solutions to just one unique combination).
But it is highly unlikely by (1) probability and (2) the intended design of these puzzles to limit to just one answer where the other choices don't work.

sudoku should have only one solution.
the ones with multiple solutions can be impossible to solve, or only solvable by guessing.
