pumpkins take a long time to grow/mature.. they would have to be started in the spring for most areas of the USA

you can plant lettuce/spinach at diff times of the growing season for continued eating... same with beans or peas/pea pods or radishes

tomatoes and cucumbers take a good amount of time to grow, like the pumpkins...

For an Autumn harvest, you can plant cool weather veggies, like lettuce, spinach, peas, beans. I would wait until late August before starting them outside as seed. You could start them inside and put them out in early Sept.
Good luck

You are much too late this year for tomatoes and such. Those need to be started in the late spring, after the danger of frost has past.

You could try and seed for the "cool" season plants to be ready for fall. Several lettuces are available, and I think spinach.

Pumpkins also are started in the late spring.

Depending on what zone you are in . . . you could plant pumpkins. In Michigan you're not supposed to plant pumpkins until July 1st. Too late for most of the things you mentioned though. Lettuce and onions could still work out though. A good gardener can find things to plant all season . . .
