Employers might consider you hispanic.. but you're not really. Unless you came from a Hispanic background then you can't be hispanic.

Well if you don't know for sure that you are Spanish, Hispanic or Latino I'm not sure what the point is of changing your last name. Dark hair and dark eyes doesn't mean you are Spanish either...You could be French, Italian, Indian, Native American etc. I'm not sure why it's so important for you to profile yourself, calling yourself by a Hispanic name doesn't automatically entitle you to the heritage.. So what is it you are going for here??
Do some more research into your heritage before jumping into a name change just to identify yourself as something you might not be..

I have dark hair and dark eyes also sweety, but I'm as white as it gets. Actually, I'm indian and Irish. Why would you want to be Spanish?
