Really short:
Azumanga Daioh is cute and runs only 4 or 5 books. Yotsuba&! has only had 4 books published in English so far. Both are by the same author. Azumanga Daioh is "four-panel strips" sort of like American funny pages, so it's not quite the same character as other manga, but it is highly regarded in any event.
Fairly short:
Ai Yori Aoshi has 16 volumes with the final one being published in English soon. It's about the same length as CCS and shorter than Bleach.
Love Hina ends in 14 volumes, I believe.
One Piece is pretty good, and only about a dozen volumes have been translated into English so far (though I think there are many more in Japanese).
Death Note is really good, and ends in 12 volumes, same as CCS.

chobits is only eight volumes, azumanga daioh is EXCELLENT and only four, yotsuba's cool, too, i dobt you'd like tokyo mew mew, but it's only seven. chibi vampire's pretty short, too.and so far, there are only two or three haruhi suzumiya mangas.

imadoki is only 5 mangas long and it is super cute :)
