Neon Genesis Evangelion is a classic.
Negima is by Ken Akamatsu, creator of Love Hina, and is pretty good.
FLCL is zany.

I'll just comment on the ones that I've seen.
Rozen Maiden - Really liked it. A bit of action, comedy and fantasy.
Haruhi - I'm guessing Haruhi Suzumiya, in which case this is a must see. Also be on the look out for a second season coming soon :)
He Is My Master - Awful. Just awful.
Lucky Star - Didn't like it at first, but after a few episodes it really grew on me. Now I never miss it.

Evangelion's my all time favourite, odd story and all but definately something different, got a mix for everybody but not in a commercial way. If you like it, give speed grapher a shot too

I watched Seto No Hanayome and TMoHS. I liked Seto No Hanayome, it's comedy/romance. I didn't really like TMoHS though, but some people really like it so I guess it depends on you.

I've only seen Negima, but it's amazing.
I'd also recommended Azumanga Daioh, although it's not on that list. It beats Lucky Star any day in my opinion (Although they are similar)

When you say 'Haruhi' do you mean 'Haruhi Suzumiya'? If so then yeah. I like that show.
