The number of lives an animal has is superstition. I think that cats sort of got a reputation for having multiple "lives" because they are quick and agile and have a way of getting out of sticky situations. But when a cat dies, it's dead. Just like a human and all animals.

It is not well known, but cats only have 7 lives, it's just that people lose count. And multiple lives is due to the fact that they are witches awaiting reincarnation, which makes the 7 lives really, really frustrating. (Cats in Diskworld have 8, but that is different magic.)
