...A couple of Crumpets [known as 'pancakes' in the US !] would go very well with your tea :

Ingredients:
1 large egg
30ml sugar
125ml milk
250ml flour
1 pinch of salt
15ml melted butter/margarine
20ml baking powder

Method:
Place a thick griddle over heat and spray with spray and cook or use butter to grease.
Beat the egg, and gradually add the sugar. Add ½ the milk, and then sift in the flour and salt. Mix well, adding the remaining milk gradually, and beat thoroughly.
Give the mixture a good beating and add the melted butter.
Lastly stir in the baking powder. Do not continue to stir the batter after the baking powder has been thoroughly stirred in. [Constant stirring stirs out all the air.]
Without disturbing the batter too much, drop it by spoonfuls onto the griddle.
As soon as bubbles appear on the top, slip a knife underneath to loosen, and quickly turn over to brown on the other side. [Make sure the edges feel dry.]
When both sides or browned, put them between the folds of a clean kitchen towel/napkin until required.
Serve with honey, syrup and butter.
