The dinner buffet at the LV Hilton would be a good choice for you, they have a very nice salad/fruit bar, great desserts(especially their chocolate cake) - And, they have shrimp, and a carving station for us meat eating seafood lovers.
Main Street Station, Boulder Station & Orleans all have very nice salad/fruit bars, good to great dessert(s) depending on your taste, and a great selection of everything else.
The Mirage, Bellagio & Wynn all have really nice buffets - If you're willing to pay the price. >Hint, if you really want to eat at Bellagio go around 3:30pm, they begin to change over from lunch to dinner which begins at 4pm. This way you can sample both and save $10 each.
You're going to hear about the "Carnival World Buffet" at Rio I'm sure. There are lots of people who watch the Travel Channel, lol - This buffet is not what it was 10-15 years ago when it was far and away the best in LV. It's very expensive now and the quality is no where near where it used to be.

You can pick up a very nice set of coupons for the downtown buffets & more at. The FSE office, 425 Fremont Street, on the second floor of the parking garage next to Walgreens. Show an out of state ID for the coupon sheet.

And a few more, the MSS coupon is the one to use, it's good for lunch or dinner(Sun/Thur) it's not good for their Fri/Sat seafood buffet(big loss for you there, I know since the GF doesn't like seafood anyway) - MSS is already the best value buffet in LV anyway, 2-4-1 makes it a no brainer. Hint, on this one you have to take the coupon to the players club booth, then they give you the 2-4-1, who knows why, that's just the way they do it.

I think the best buffet in Vegas is a relative thing, so I've made a list depending on what you're looking for:
Best Buffet for the price: Luxor and Monte Carlo Buffets. Here both buffets have a wide variety and lunch and dinner will run you only about $13 and $19, respectively. Luxor has a very wide selection and the eating and seating area is very large - spacious. At Monte Carlo there is a "fresh pasta and Fresh Asian food" stands where the chef prepares the food YOU chose right in front of you - very tasty.
Best Buffet PERIOD: If price is NOT an issue and you really want the best quality and service, then Bellagio Buffet and Wynn Buffet are definately your place. Bellagio has the best food that are surprisingly high quality for a buffet - nevermind that you might even find some of their food in a very nice restaurant (filets, king crab, custom deserts, creme brule, etc.). Plus the setting and atmosphere there is very nice and spacious. The Wynn is also very nice - beautiful eating area, might be nicer than most restaurants you've been to - plus the food is to die for. Very good deserts and meat selection, plus they have all these side dishes that are steamy and delicious. Both buffets will set you back ~ $20 for lunch, $30 for dinner.
Other good buffets: The Harvest Buffet at Planet Hollywood casino (formerly Aladdin), MGM Grand Buffet, and Rio's Carnival Buffet round out the last of my top buffets in vegas. Planet Hollywood's buffet might be my favorite overall, just because I'm not sooo into fancy foods that you find in Bellagio and Wynn - even though their settings are the best. My favorite buffet is the one at Mandalay Bay which has a lot of choices including a pasta bar and tons of veggies. It also has the distinct advantage of not being crowded. My second favorite is the Buffet at MGM Grand and the third is the one at Luxor.
Personally, I would avoid the Excalibur buffet and the buffet at the Sahara (wouldn't even go in there because it looked dirty). The buffet at the Wynn was very, very crowded (over 1 hour wait in a hot line) and the food wasn't that wonderful. I wasn't too impressed with the buffets at the Mirage or Treasure Island but other people really like them so it may just have been me.
Almost every hotel has a 24 hour cafe sort of place that serves a variety of different foods. This might be a good alternative to a buffet for your girlfriend to be sure that she gets food that she wants to eat. The Grand Luxe cafe at the Venetian is operated by the Cheesecake factory.

Las Vegas is really a city that has anything for everyone so find it with hotelbye . Las Vegas is really a city with good attractions and some of those could be the famous Las Vegas Strip; where tourists can like a walk in the warm leave evening, or take a stroll downtown and see a dazzling light reveal that spans an entire street, the Fremont Street Experience. Readers also can get a view of wonderful world famous re-creations like erupting volcanoes, the Eiffel Tower and the Sphinx of Egypt facing the various hotels and casinos. Las Vegas is just a city that continually reinvents it self, therefore even if you have now been here before you'll never go out of enjoyment items to do.

I've been to several buffets but my favorite is the one at PH (formerly the Aladdin). I do not eat seafood and am pretty picky, in general I dont even like buffets, so it means a lot when I say I make a point of going to this one every time I go to Vegas. (I was just there last week!) They have stations from around the world, so the variety is huge, and as far as for no meat eaters, there's usually cheese enchiladas, pasta, salad bar, and various veggies. I went last time on Sun around 11 and they still had breakfast going too.

I would have to say the Spice Market buffet at Planet Hollywood is fantastic. Tons of choices and reasonably priced for the great food you get. I know your girlfriend doesn't like seafood, but if you do, the dinner buffet is the best because there is all you can eat Alaskan King crab. Hard to go wrong with that. We make sure to go to this buffet at least once every time we're in Vegas.
I've also heard that Cravings at Mirage is really good also, but I've never been.

The best value buffets are not on the strip.
The strip is for tourists that don't have transportation to get off the strip, and are a captive audience for the overpriced meals. Way overpriced IMO.
Locals eat off the strip.
Try the Orleans, Silverton and Main Street Station (Downtown) for great value buffets, AND you can get 2 for 1 coupons for the buffets by oredering a book called
AMERICAN CASINO GUIDE 2007 Edition. (Author Steve Bourie) Available on Amazon, eBay etc. Coupons good until Dec '07, also good for some shows and a few casino bets.
You need to go downtown and get the FREMONT STREET EXPERIENCEfun book coupons for a Main St 2 for 1
It's well worth the cost of the book if you are going to LV for 3 or 4 days or more. LOADS of great coupons in this book.
Silverton Lunch Buffet is $9.95 and 2 for 1 in the book, amazing meal for 2 for $10 !!
Others are $15 max, but 2 for1's are in the book.
You need a car to get off the strip for Silverton or Orleans, but you can take a bus downtown for Main Street Stn.
Th book is WELL worth the cost if you are there for a few days with a car. Have Fun

Well, I've been to Bally's, Paris, Caesar's Palace, Rio, and Excabliur buffets. The one that was the best out of those (hands down) was The Rio. It's a big buffet, and all of the food was good. I didn't get to try everything, because there was so much and I was too full to try it, but I did try a LOT there, and all of it was good.
Excalibur was probably my second favorite. No complaints there. Plenty to choose from.
Bally's seemed like the average, good buffet. I didn't like Paris too much, because it had different foods than what I was looking for, so I guess that depends on the individual. Caesar's was horrible to me. It didn't have much to choose from. I was out of there pretty fast. Just sharing my experiences.

At many buffets, there's enough of a variety to please almost any palate.
Brunch at Mandalay Bay is AWESOME. It's not cheap, but it ROCKS.
Lunch at the Palms buffet is great as well - and how can ya beat $9.99? I loved it. That was a belt-remover. (And I'm not a big eater, I'm very picky.)
Luxor's buffet is really good as well. I've gone to that one three or four times over the years.
My friends who are locals say the one at Mirage is really good as well - I've never made it there.
Stay AWAY, FAR AWAY from the one at Terribile's - the name says it all. Hot food wasn't hot. It was also greasy and gross.

I enjoyed the buffets in Paris, Mandalay Bay and Main Street Station Downtown. They all offer various chicken, salad and bread options to satisfy those who don't like to eat meat or seafood.
I found the Bellagio buffet a bit expensive and while I enjoy finer foods they just didn't seem well served.
