I'd also have to go with Java fern, Java moss, hornwort, and banana plants as being less likely to get eaten. Although the snails may eat the dying leaves, they would be more likely to let the healthy ones alone.

Just give your snails enough food of their own (leaf lettuce, zucchini slices and cucumber slices, algae tablets, snail cookies), and they may not disturb plants that aren't as appetizing to them (as much).

What species of apple snail? You should be able to find out the species here http://applesnail.net/ Some species perfer plants more than others. From research I have found that the plant eating apple snails will eat Hornwort, Java Moss, Java Fern, and Anacharis. I couldn't find out if they ate pennywort or banana plants. Although I have to tell you my apple snail doesn't like to eat banana plants, but he isn't a big plant eater anyway. From research Ramshorn snails will eat Anacharis and Java Fern and they generally don't like java moss and hornwort. I couldn't find out if they like the banana plant and the pennywort. Trapdoor snails have a low plant eating capacity and probably won't eat any of your plants. Trumpet snails also do not have a high plant eating capacity so they will probably leave your plants alone too. If the snails have plenty to eat they will be less likely to eat your plants.

Ramshorn- Low to Moderate plant eating capacity (some larger species love plants)
Mystery/Apple- Low to High plant eating capacity (depends on species)
Trapdoor- Low plant eating capacity
Trumpet snails- Low to Moderate pant eating capacity

The Anacharis and Pennywort would certainly be at the highest risk of snails eating them. They are both fairly soft and are very commonly infested with pond and other snails from wholesalers.

Java Moss, hornwort and Java Fern I doubt would appeal to any snails and wouldn't suffer any damage at all.

The banana plant will be at risk from larger, snails especially when first growing it's new leaves.
