Are you talking about in advertising, tv and movies? Because they are more photogenic with their loud coloring than a plain black angus or a ugly brown hereford. They catch people's eye quicker and say "look at me."

Same reason a Rodeo Stock Contractor wants loud colored bucking horses. They want the paints, appaloosas and roans. Because they have that "wow" factor that a chestnut horse doesn't have.

Depends where you are located. Recently the Universities are getting away from Holsteins and introducing Jerseys due the smaller size of the Jersey making it easier for the students to learn on.
Holsteins and Jerseys being the dairy breed and Angus, Short Horns, etc being the meat breed.
Angus, short horn and few other breeds are much more popular in the Midwestern states where livestock producers are growing them for meat.
I think the black and white make the Holsteins attractive and distinctive therefore getting the most popularity in decorations etc.

9 of every 11 dairy cattle is a Holstein (in the US) so yes they predominate big time.
Now the beef breeds are dominated by Angus & Herfords but the demands of the marketing of milk require the dairy breeds to be closer to the center of populations (and artists & camermen) than the beef breeds, also a cow used to human handling (milking) twice a day is a more coperative model.
