Henckels S-series profession chef knife. I have the whole set but the 8" chef knife is the one that gets the most use.
Not cheap but well worth.
These knives are always rated as the best. And this is the top of the line.
Very low maintenance. But watch out. It's lethal on the fingers.

You don't buy just one kitchen knife. Knifes have different functions and if you cook, you need them all. Buy a basic set of J.H.Henckels or Chicago with the block and you will cover all your bases. Buy the best you can afford. You won't regret it.

Go with Cutco... they are a bit more expensive, but they are very good knives of a very high quality. The best part is, if you send a blunt or old Cutco knife into them they will either re-sharpen it or replace it entirely for free.

I would highly recommend getting a CUTCO knife because you would never have to buy an other knife again. If you need it to get shaped,they will shaped it for free! And if it ever broke or missed up they would replace it for free!!!!!

There are so many at stores that it's unbelievable. So I really don't know, but I always liked the ones that Chef Tony advertises on television. He says if they ever need sharpening, they will replace them free.

go to an actual knife store (the kind found in a mall) they should be able to point you in the right direction.....
also, the wilshire "stay sharp" knives are great (the ones that are stored in their own sharpener) i have one, and it has never let me down.
