They call them contour lines. The closer together, the steeper the incline, and vice versa, the farther apart, the more gradual slope. As for the water line, you have to be able to read a map that will have land and water contour lines. The way they separate the shore line from any other line might be marked if it's a reliable.

Just use numbers for elevation. Put negative in front of number to indicate below sea level.

How about an up-arrow for "above sea level", and a down-arrow for "below sea level"?
