The first few things of starting a good business, is obviously good customer service, make sure that you're customers feel comfortable, welcomed, but at the same time make sure you're not on them like a hawk. Basically a good staff is essential to running a restaurant and of course the food!. Having daily specials, and family special nights help alot too. Most businesses like to lure in the crowd with special prices, though I feel the most important is having a great staff!

this goes to the question "what customers REALLY want." - there is a book by that name.
They want good food
they want good prices
they want a clean environment
BUT have u ever wondered how some greasy spoon restaurants stay in business, complete with old rundown hardware.
It's the people.
friendly, attentive, caring, down home folks.
Try a restaurant with great food, location, facilities and abusive staff.
Bet u don't go back.
think about it - list the things and rate them. Bet it comes out the same.

In the restaurant make those table triangles that display specialty meals for the customer to see. How many times do people sit down and look at the little picture of the burger and say "oh, that looks good" Take the 3 or 4 best looking dishes and take great pictures of them then create one of those. People love to SEE what they are gonna eat.
Other simply ways is simply customer service. Making sure that your customers drink isn't empty for more then even a few moments. Not rushing them out or making them feel unfomfortable.

Theme nights, guitar players on some nights, karaoke contests at the bar (if they have one), raffles, host the Rotary club lunch or knights of Columbus, Lions club, etc (they have them every week), Bring in a Latin dancer (or whatever is appropriate for the kind of food) and offer a quick free dance lesson....most dance instructors would do it for free to try to get new clients. Make the restaurant FUN. Food is very expensive when you eat out so people need a reason to get in their car and go there. Good food is not always enough. They have to have an experience they will remember and want to repeat often. If the restaurant is kid friendly - go birthday parties, do catering - theme catering, luau nights, etc......there are ENDLESS possibilities. Good luck!

Other than having a good location, there are many things your friend can do. If she has a bar in the restaurant than she can do even better.
Here are some ideas for here:
* Have a jar in the waiting area and do raffles of "dinner for 2" for those who drop off their business cards.
* Use those cards to create a mailing list and send coupons no more than once a month like "$1 off at every $15 meal".
* Have Prix Fixe event once a month. This might break even for food but she can make her money back with drinks.
* Drinks specials once on slow days of the week (usually Tuesdays and Thursdays) like $1 mix drinks but food at full price.
* Invite local newspaper entertainment writers to visit her restaurant.

Your friend may want to try having a senior night or a family night..... around opening night.......
Give the ultimate service and prepare the best food, and the people who ate will definately tell others of their great evening they spent dining at the restaurant.....
Positive word of mouth will definately bring more business!

Make sure you open the restaurant in a predominately white collar town. White collar type people LOVE to eat out!!!
