Try reading every single Forgotten Realms books, the ones that are written by R.A. Salvatore. Those books about Drizzt Do'Urden are some of the best fantasy books around. Also, try out the Dragonlance books written by Tracy Hickman and Margaret Weiss. To start with the Drizzt books, read Homeland, it's the very first one. As for Dragonlance, start with Dragons of Autumn Twilight. You shouldn't have much trouble to figure out which book comes next after that because it'll have a list of them in order on one of the first few pages.

Have fun, those two series are great fantasy books.

I know how you feel iv'e just finished today, i'm thinking so what do I read now

I would recommend:
His Dark Materials by Philip Pullman consisting of Northern Lights, The Subtle Knife and The Amber Spyglass. I read this trillogy a while ago and couldn't put them down

You also look at any books by Dan Brown or Michael Crichton or you could try any of the Edge Chronicles Series

Try the Temeraire books by Naomi Novik

Or The Lies of Locke Lamore by Scott Lynch.

For something really dark & nasty Hunters Moon by David Devereux (OK that ones a plug for a mate of mines book but it's a damn good read, but should probably have an 18 rating on it)

have you read The Edge Chronicles? they are REALLY good and should take your mind off HP. there're nine books in the series.
Also Eragon and Eldest are much better than the film would have you think. it might take you a while to get started as the first half of eragon is a bit slow-going, but it's worth it

hope this helps
if you need any more just ask

My first and foremost suggestion would be Ender's Game by Orson Scott Card-- it's one of my favorite books, and I recommend it to anyone of any age, even if they don't usually like science fiction (which it is, not fantasy).
Philip Pullman's His Dark Materials trilogy is good fantasy, but watch out for the VERY anti-religious themes in the second and third books.
C.S.Lewis' Narnia Chronicles are another good one, to which Pullman is the antithesis-- they're religious allegory behind the fun and fantasy.
Good Omens by Niel Gaiman and Terry Pratchett is wonderful
The Hitchhikers Guide to the Galaxy is a lot of fun.
If you like dragons, go for Margaret Weis or maybe Anne McCaffrey.
If you like the epic-type fantasy, try Robert Jordan or Terry Goodkind.
For a more science-fictiony book try Tad Williams' Otherland series-- the first one takes a while to get interesting, but once you're hooked it's quite a ride.
Hope you find something!
