what do you do when the neighbors are calling the county and saying you have too many cars that are junk that in fact run all of them,angry...

Unfortunately you have to find out if your county has laws about it. You may think your neighbors are being mean, when in fact that may be true, however you can't do much unless you find out they have no ground to stand on.

If all the vehicles run, you are not breaking the law.
The local law enforcement will get tired of them calling on you. Always have your documents in order and be ready to show that your vehicles are indeed running.
You could consider filing a lawsuit on the neighbors for harassment.

If they have license plate that are current then dont worry about it but most cities have laws prohibiting cars on propertys with out current plates because they dont want junk yards and just because they all run is still no reason to have a lot of cars in your yard

Be the bigger person and ignore them. If your cars are legit then the county will find out and leave you be. Some people are just a uisance and if you bite back, then you may inadvertently start a war.

Once the county comes out and sees that in fact the vehicles do run, then the problem goes away. See, wasn't that easy.

My neighbor complained that my kids left the yard "messy". Jerks. She even sent an anon message...posted to my door. I laughed..then we moved. She was nice until her bf moved in with her. I told her I would pick up when she stopped leaving used PG tests on the ground next to the trash cans for the neighborhood kids to find. Ewww.

If your parking your cars on the sidewalk, in neighbors driveways then that could cause a problem. If not, then they need to mind their own business!!

Are they all registered?
If not then they are considered junk cars, regardless of whether they run.
