I don't know about sanity, but I would say that rational thought is the mastery of irrational thought. While sanity tends to be the default position for most people, I've also noticed that emotional thinking (as opposed to rational thinking) also seems to be the default.

I suppose for a person who is fighting their insanity, then to be sane would be both mastery and a victory over insanity. For such a person, being sane requires a conscious effort. Likewise for (IMHO) most of the population, thinking rationally also requires a conscious effort.

And yet, it is sanity and rational thinking that would seem to go together, even though rationality requires special effort while sanity is usually the default....

I like to look at it from the other direction.

Insanity is the mastery of Sanity.

Or is insanity the master of sanity ?

The majority rules. The insane majority claim they represent sanity so I would favour the above.

Yes, because sanity encompasses insanity. If we didn't have the notion of sanity, we wouldn't be able to define insanity. Insanity is derived from sanity.

By definition of the term, sanity is the opposite of insanity. Whether that makes it master or not, who knows.

That depends on whetherr you are the person sitting in the chair or lying on the couch. If you are lying on the couch I would say yes. If you are sitting in the chair there is no such thing as sanity or insanity. There are only problems to be explored.

I think they are mutually arising phenomena. Meaning they are like high and low, short and long, wet and dry. Each can only be judged by the other. Via my cosmology then sanity and insanity are two parts of one whole.

It's the absence of insanity. I say this because i don't believe we are born insane and conquer it later in life.
