i.e. should I scan each of the files after they have all been extracted from an archive?

Depending on your antivirus, most can be configured to scan within zipped archives, thus there is no need to extract them and rescan them. Check your antivirus manual.

Yes I would. It's a good idea to do so in any case, whether the program came from friends or not.
You never know what someone else has or has been infected with.
Most anti-virus' will scan inside archived files anyways.

No, virus software scans the contents of all files and folders, weather they are zipped or not.
