In American football, the referee is in charge of the officiating crew and stands behind the offensive line, and mostly watches for violations in that area, like holding, roughing the QB,facemasks, etc.
The umpire stands behind the defensive line, and performs a like function in that area, but will generally see different players, or see them in different stages of a play.

The sport they are in, most have one or the other. The few that have both the Umpire is above the Referee in rank.
