Most of the time they're just using punctuation, greek letters, or special characters to create their names. Here's a few sites with them so you can make your own:
http://www.cloford.com/resources/charcodes/mathsgreek.htm
http://www.webmonkey.com/reference/special_characters/

The problem with using different FONTS (not just special characters) is that the font has to be installed on the person's computer in order for them to see it. That means you can find the coolest font ever, and no one will be able to see it but you :(
Special characters and greek letters can show up in any standard web font though, so use those for maximum visibility.

Pretty writings is the thing,
Not a golden wedding ring,
A verse or rhyme to show them all,
A word or two upon the wall.
Something sweet upon the page,
To make them think I am a sage.
To make a poem, oh so sweet,
To lay beneath another's feet.
That is the thing I wish to do.
I do it when I think of you.
