If I wanto learn what happens in HTML/SQL/LDAP/FTP at a packet level whaere do I start? Want to understand all protocols at there core.

Check each of those topics in Wikipedia and look at the resources describing the topic. A wealth of information can be found in various consortiums and is beyond a quick answer here.

HTML / SQL / LDAP / FTP are upper level protocols. Accual prototal on the network is TCP/IP which has other protocols that traverse the network within the packet too OSPF and NTP are just a couple.
TCP/IP is key to learning about networks.
