As Steven says, none.

For a vehicle with a 3.5 tonne gross weight to carry 2.5 tonnes of freight, it would need to weigh less than 1 tonne when empty - in other words, it would weigh barely more than a Ford Ka. Obviously, that is not possible.

The absolute maximum you'll get in the very lightest Luton type van is about 1.25 tonnes. A brand new Ford Transit Luton, for example, has a cargo capacity of 1.1 tonnes...

You'll need at least a 4.2 tonne, or maybe even a 5 tonne GVW, at the Luton van will weigh about 1.7 to 2.0 tonnes unladen.

The post-2000 Ford Transit, Mercedes Sprinter and VW LT and Crafter are available in 4.2t versions.
For a 5 tonne GVW you'll need a Renault Mascott, Iveco Daily or one of the smaller trucks such as the Nissan Cabstar, Mitsubishi Fuso Canter, Toyota Dyna or Isuzu N-series.

the short answer is none if you are looking at a van with a gross weight of 3.5 tonnes.you need to look at vehicles upto 7.5 tonnes but anything over 3.5 tonnes will need a tacho and will be subject to drivers hours etc
