I know it will blow up the engine but I would like to know what really happens inside. The sugar must dissolve to pass through the filter and carb, but does it reform into crystals and damage the cylinder walls, ruin the rings or what.

nothing, unless they are unfortunate enough to have water in their gas tank also. sugar and gasoline are both carbon based and as such gasoline will not dissolve sugar. worst case scenario is that the screen on the fuel pick up would get restricted but it will not cause the catastrophic damage that legend has heaped upon it. experiment with some gas and sugar, the sugar will not dissolve unless you add water and then it produces like a blob or clot which can happen in a gas tank and at least temporarily cause the car not to run or to run poorly,

the sugar dissolves temporarily, and travels through the fuel system until it is injected into the engine, at this point it crystallizes and basically becomes sand paper on the pistons gouging and destroying the cylinder walls. not much fun eye. in addition fuel with sugar is not too easy to dispose of from what i have seen.

This was on myth busters in small amounts nothing in very large quantities it will ruin the fuel system.

u will plug the fuel lines and damage the injectors and in most cases the engine
