EP means "extended playing"
LP, which typically is referred to as an "album", means "long playing"
Guy above pretty much has it, just length of the disc, especially when they were on vinyl. all my EP's typically have about 5 songs on them, and most LP's typically have around 12 or something. Thats obviously an extreme generalization but you get the picture

Length.

An EP can contain anywhere from three to nine or ten songs and is brief, much shorter than a typical album. The songs were meant to be sold together and are not promoted as a single.

The older albums were as short before 1970 as some of the EPs are today. Full albums today are usually no shorter than 41 minutes. Albums, especially concept albums which tell a story, are usually sequenced to have songs in a particular order to promote the creative idea of the writers and/or producer.

EP's are shorter than full length records (10 tracks or more) but longer than a single (2 tracks or less) so they usually have around 6 songs. they're done when a band doesn't have the time or feel like making a full-length record, but don't want to disappoint fans. i have a few EP's. i think they're cool, cause sometimes records get boring.
