An employee is saying that his company car ( Audi A6 Estate ) is using 0.5 litres of oil per 600 miles.
I do not think this is true.
Is it?

Many manufacturers quote 1 litre per 1,000 miles as acceptable in a new car. Your employee's car is less than this.

VW Group products (including Audis) are notorious for using oil when new. The amount of oil used generally reduces once 10,000 miles is passed.

I agree with the previous answer. Unless there is a problem with the engine seals, oil should never be consumed at that rate. Oil lubricates the engine cylindars and drive train, it should never be "combusted" like petrol/gasoline.
Now if the question is how much oil is used when the oil is changed, that is a factor of the engine size and a good rule of thumb is the number of quarts is about equal to the cylindars the engine has. If there is a turbo, add one or two more to the total.
I have an A6-4.2 8 cylindar and it uses about 8,25 quarts a change. My friend has the 2003 S6, which is the same engine as mine but with twin-turbo and his uses 10.5 quarts a change.

actual yes it is true, all moden cars run on very thin oil now days, it is beater for engines as thinner oil goes round the engine with more ease, and their is less chances of blockages, the downside is the oil is burnt off quicker and uses more

All new cars use more oil it's called the Bedding in process.

I would hope none. If it is using any it needs to go to the shop to find out why.
