I just want to know how they are organized using volumes and chapters. Are hey like seasons and episodes in a tv show?

yes. a manga is typically a serialized story in a monthly magazine. If it was able to go on long enough, a publisher may pick it up and combine the short stories into a Manga.

Then it's called Volume, and each monthly story is a Chapter. A volume has anywhere from 8-11 or so chapters.

A tankabou or a volume pretty much is a collection of the chapters. Usually a Tankobou will aim to have at least 10 chapters or a certain number of pages for publication. That is why sometimes the volumes range from 8-11 chapters.
Many of the times they are not organized into seasons because that will be just a huge volume. For example, if there were to be a sole publication of Ennies Lobby arc for One Piece, the Tankobou would have to have at least 230 chapters which that will be just about 2300 pages or so.
