More specifically, I want to go to UC Santa Cruz, but they do not offer a journalism/communications major. Will this hinder my ability to get a job in this field? I am really not quite sure if this is a major I would particularly like, but would probably feel more comfortable in going to UCSC if it's offered. Should I throw out UCSC as a college option?

Most companies require that you have a degree in the field that they're hiring for. A journalism major would have specific classes that you'd need, and the best thing to do would look at colleges that are the best for your major. Many employers will look at what your degree is in AND where you got it. If a uni has a high priority for your major, then they will have a better put together course and better educated professors in that area. If they Offer it but it is low on the list of priorities it's like comparing a walmart ring to a ring from Tiffanys, it does the same job, but has nowhere near the same quality.

If J/C is what you really want to do, then look for a school that bills J/C as a high priority.

If you know that you want to be a journalist, you need to go to a school where you can study that field. You will be putting yourself at a major disadvantage, at the very least, if you don't even try to go to a school which offers your preferred major. I can just imagine the job interviews:
"Why didn't you major in journalism?"
"I thought it would be more important to go somewhere which made me feel good, rather than going to a school where I could pursue my academic interests!"

On the other hand, if you aren't committed to journalism, and just thought that might be something you would like, take a look at what UCSC offers. You may find something offered there which appeals to you just as much, making the idea of going there much more realistic.

You can't major in something that is not offered..and it is easier to get a job in the field you majored in..you have a choice if Santa Cruz and the Banana Slug mascot is your dream then change majors..if journalism is your choice San Jose State University and the Trojans are a good place to go.
Visit Santa Cruz and the beach on the weekends.
