I just buy a box of Jiffy cornbread and follow the directions on the box. (No one knows) lol. It goes good with anything. I usually make it with chicken.

The easy way, cornbread mix, on the aisle with flour and cornmeal at the grocer.
Two pkgs cornbread mix
One tablespoon all purpose flour
One tablespoon granulated sugar
One teaspoon baking powder
One teaspoon salt
Two eggs
One and one third cups milk
Preheat oven to 425 degrees
Mix together dry ingredients
Lightly beat the eggs and mix with the milk
Add eggs and milk to dry ingredients
Pour into greased and floured 9 inch pie pan and bake 15 to 20 minutes, or until golden brown on top.
Cornbread goes with peas, beans, boiled potatoes, greens, milk, gravy....actually, anything.

On the cornbread butter and honey, or as a seperate dish i always liked chilli with it. Go to foodtv.com they should have a bunch of recipes.

Well here's my recipe:
Drive to Boston Market
Say, "I would like to buy some cornbread please."
And get a rotisserie chicken, veggies, mashed potatoes, and a pie.

1 cup flour
1 cup corn meal
4 tablespoon sugar
2 teaspoon baking powder
2 teaspoon salt
1 cup regular milk
3/4 cup veg oil
1 egg
mix your dry ingredients first, then mix in the rest together. mix well!!!
Set oven to 375
Grease a cake pan
pour your batter in the cake pan
let cook for about 20minutes- 22 minutes or so
HAVE FUN !!!
Goes well with black eye peas, collard greens, bake chicken and rice, dumplings, roast rice and gravy, many things!!

Yummm... my fave.
You can either get a Quick Mix, like Jiffy or Lily, or you can make it with corn meal, sugar, milk, salt. There are recipies online. Chili and other spicy/southern foods go well with it.
