I don't have a specific person for you. You will have a little trouble finding a person who "specializes" in photography. There are definitely people who do it tough. The casino's have talent turn in headshots and the bars post shots up on who will be performing.
Check out this page which goes over how to pick a photographer. Any photographers you meet out there should also check out the site because it will help them focus on what is needed for headshots if they are not as experienced.

I doubt if you will find a professional headshot photographer in New Orleans.
If you have some vacation time, fly down to NYC and get headshots. There are many headshot photographers in NYC.
