A few of the shows we are looking to go to say things such as mon-fri 9:00 pm dark thursdays. What does this mean?

In show business, "dark" means no show. If it is dark for the day, no show for the entire day. Your example means no shows on Thursdays. Go another day. Las Vegas is so much fun, wish I was there with you!

"Going dark" means turning off the lights and heading home.
"Dark Thursdays" means that's their day off.
