The only Gallegos' I've ever known were either from Florida or New Mexico and hispanic.

Just seems like a unique way of spelling Theresa, which is Greek and means "harvester." That doesn't necessarily mean you're Greek. Gallegos is of Spanish origin.

My name's Katie, which is Celtic/Gaelic; and my last name is Scottish, but I'm neither - I'm German. So you can never really tell from just a name.

I think it's a nice name. I'm not so worried about judging everyone's ethnicity that I analyze their name to figure out what it is.
