There is one rather well known sand garden. Derek Jarman has built a garden on beach sand.

Maybe bowls of sand with votive candles. Don't forget beach towels, flip flops, sea shells and margaritas! For music.. Jimmy Buffet! Check out Martha Stewart's website for some great ideas.
