First major difference is the heat. I grew up in Virginia and now live in SC. I find that the heat is no worse than VA, nor is the humidity, the summer is just longer and the winter is nil. Winter is cooler temps, no snow, no ice. Worse than the temps and humidity is the sun. The sun is sooooo strong that it will beat you into the ground and ask who your next of kin is.
Next, culture. The south is a friendly, very accommodating culture. The north is cordial more than it is friendly. However, beware. A lot of southerners try to take advantage. They blow sunshine while trying to rip you off.
What part of Georgia? Atlanta, for example, is city and therefore not very southern. Savannah, VERY southern. So the area makes a big difference too.
Also, humidity will cause moisture problems. Tools left in the garage / shed will rust. Mildew. Moss grows on sidewalks. It's not hard to control, but work will be involved. Easiest to bleach wash everything once every few months.
Oh, and people always told me how much I'd hate the bugs. How much worse the bugs are in the south. So far, I haven't seen it. There are more crawly bugs, and the bugs do get bigger. But I don't have nearly the issue of them getting in the house that I had in VA (which is still the south but geographically north from where I am now). In VA I couldn't go outside from April through November or I'd be eaten alive. VA has a ton more biting insects, especially mosquitoses. Maine, too, is worse for biting insects.
All-in-all, you will enjoy it. It will be a new adventure for you, and I love moving to new places. I know a lot of people who are born, grow up, have families and die in the same town. I can't imagine this. I feel, personally, that living in different areas bring different cultures and make a more well rounded person.

I live in NH too. I've lived in the south, but not Georgia.
In NH we get a few days a year with heat and humidity, down there the whole summer is like that. The winters are much milder though.
Christmas will just seem weird in that climate.
No snow - yea!!! No skiing:(
Cockroaches. Get used to the idea of hiring an exterminator and having your home sprayed once a month.
The racial makeup is going to be entirely different from what your used to lily white NH.
No steamers, no whole belly fried clams, no fresh lobster.
Great peaches. No blueberry or apple picking at least like we have.
Some people talk real slow and you just want to whack on the back to the words out faster.

I was transferred from San Francisco to Atlanta a few years back. Really enjoyed it. Nice climate. Nice friendly people.
Not far to the ocean. Lots of family activities. Gets a little warm-and humid.
Will certainly have no use for the snowblower and snow shovels. And I definately liked living in Georgia.

People will think you talk funny, you will think they talk funny. Don't worry, you should be able to get used to each other. Oh and imagine the hottest day and muggiest day in NH, now times that by 2. Hint, it's a bit warmer down there to say the least.

I'm moving from NY to NC next week, and the most common thing I've heard is to be prepared for the much slower pace of life in the South compared to the Northeast.

It became wonderful to force around the U.S. and land in CA. It became a 3400 mile holiday and took us each and every week to get there.

watch out for the heat and the humidity - oh there's lot of new bugs to deal with - especially palmetto bugs - essentially large flying cock roaches - good luck with that

Let me offer my condolences. As a Northerner your neighbors will talk about you all behind your back and be sugary sweet to your face. They are still fighting the civil war. You will never truly be welcomed.
