Depends on how you define professional. Baseball started paying some of its players in 1869 or so, at least over the table. The National League started in 1876.
Jockeys might be around that era too, if you'd like to count them.
There might have been cases of individuals or companies hiring "ringers" even before that for periods of time, but they weren't exactly written down.
