I hate when that happens. The reason is because when the beer is in a closed can or bottle it is under pressure. Because of the high pressure, the freezing temperature is lowered. However, when you open it, the pressure is released and it drops to normal pressure. When this happens, the freezing temperature rises. If the temperature of the beer is below the freezing point at normal pressure, the beer will freeze immediately.

Partly pressure, partly supercooling. You can demonstrate the latter effect by not opening the bottle when you take it out. Just shake it and watch the crystals form. It may need to colder than the temp at which you can get the pressure-release effect of answer 1.
