Aesthetic sense comes from the cultural background and living standards of life. It may have a genetic bias. The preferential treatment may have an underlying feature involving genes and races.

Fancying is hormones or culture or both. When hormones are at their strongest, you find yourself attracted at virtually everyone-well not you, not everyone, but many of us. One´s culture also influences taste because people identify themselves better with people with the same background, or they go all opposite for vatiety. Both women and men are said to pick partners on the basis of quality reproduction, thus, physical health stereotypes in various cultures also play a role. But it is usually much more complex than subconscious-or conscious-adoption of a sterotype.

When there is chemistry with a person, I think there are a number of factors that imply you could be connected in variour levels. But fancying someone, could just be plain hormons.
