I believe you have to change the colour on the wrong side - but what exactly does that mean? If I am holding the piece with the right side facing me on the left needle is that when I change colour? Or the other way around?

If you're working in stocking stitch (knit a row, purl a row) start a new colour with a knit row, that is with the piece of work on the left hand needle.

When the right-side is facing you (as you knit), you are knitting a right-side-row, but If you're changing colors at the edge, it's not so important. The main thing is to have any 'tails' woven in so they only show on the wrong-side.

Generally speaking, you change colors on the right side of your work, unless it is some kind of fancy color pattern, in which case the directions would tell you to change on the wrong side.
