Amongst the first was religion. Most of the Philippines were Hindu and (Mahayana) Buddhist with a small group in the south Muslim. The south is still Muslim, but the rest of the Philippines is Catholic. Only the Chinese in the Philippines are still mostly Mahayana Buddhist and there is no Hinduism practised anywhere in the Philippines.

The Indian "Ramadham" style of dance, as is common in most of Southeast Asia except Vietnam, has disappeared. So has the puppet theartre.

There are other cultural changes, but I cannot think of them as prominent as the above.
