In most constitutions of non-Profit charities, specifically religious organizations, they have 'trustees' listed - but what are their legal responsibilities - if any?

References to the their role - from a Canadian government website - would be appreciated.

A trustee is responsible for managing the assets of a trust.

In the case of a non-profit charity (charitable trust), the trustee is responsible for making sure the proceeds of the trust (the money donated) gets to the intended beneficiaries.
