If I thought your question were serious, I would answer 'general science' and I wouldn't be joking. That's the name given to the first significant science course in a school curriculum, usually before the 9th or 10th year. It tries to give a flavor and overview of science, and it should introduce the scientific method.

The most fundamental or foundational science is physics.

If you mean one that covers the most catagories and phenomena, I'd say physics. There are all kinds of branches of physics, but physics itself covers the physical nature of the universe.
