For best flavor, pick when just ripe or approaching ripe. Don't pick too soon, then they taste like store bought.....bleeeech! You may find the fruit ripens at different times on the tree.......so let your hand and nose be your guide. When coddled in your and and squeezed uniformly by cupping your hand, it should give slightly...........and smell like an apricot!

When they are ripe... I have had them when they are too green and they don't seem to get any riper on the counter.
