I believe this answer can only be based on one's belief's at the moment as there is no 'official' answer (yet).
Many people have answered 'energy', I think this is probably correct. But what kind of energy? Well... that's debatable. Negative energy? Positive energy? Chi?
(Note: Yes some ghosts are made up of illusions and hallucinations)
I think the only answer I can give to this at the moment is this:
"Gas Matter"... Well - the typical/stereotyped ghost is gas matter. This probably applies to apparitions, and orbs.
There are other ghosts though that ARE "liquids" (yes, there's a photo of spirits FORMED in water - it's of 2 sailors apparently).
And of course then there are the "solid" ghosts - that look solid... until they disappear or fade or something like that. These can be apparitions too.
(- you know, solids, liquids and gas? - therefore they need to be made up for some kind of atomic structure).
Ghosts like Poltergeists and Shadow Ghosts seem to vary and can't be put into any of the above. I guess I have to conclude that poltergeist are a form of negative energy formed by the human mind. I don't know about the shadows though...

Well i believe spirits are made of a persons personality and soul, i read once on this article that when a person dies they wheigh in lighter than they usually were when they were alive. Just after my father died i went to see him at the hospital and i looked at him and he looked empty and i could feel that too, so i think that his spirit was free, and i also belive that a spirit can either stay on earth or move on to the spirit world, i think my father has stayed on earth cus we see him in the house often... well that what i think anyway, its up 2u what u and the others think...

There is no answer because there is no evidence to study to find out. If they exist, they aren't leaving a trail behind.
ectoplasm is under consideration but is still not a documented spirit remnant/

Alcohol. It gives off vapers, aroma, taste and may cause halucinations - all of which are presented in reports about spirits in one form or another. And alcohol comes in different forms, maybe that's why they call it spirits.

Spirits are created from strong emotional feelings that create energy. So you don't have to be death to create a spirit or a energy burst. Energy can be created but not destroyed, so the energy remains and fluoresces under certain conditions much like a fluorescent lamp and becomes visible.

In Islam, devils are made of fire, and the Angels are made of light, Adam, the first human in the other hand was made of earth, therefore explaining why many earth minerals are needed by the human body.

Spirits are the name given to the energy that continues beyond the body after death. Energy never dies, it can only change form... such as ice, to water, to steam.
