How do these Flash Psychic / Flash Mind Reader things work?

I've seen many things like this in the past and have always wondered how it works. It is something to do with Mathematics I've read but can't be arsed to figure it out. It is amazing and I'd love to be able to do this on my own. Can anyone explain this?

It is math, nothing more, like you said. Someone creates a math formula that only results in certain numbers, then puts the same symbol next to all the possible solutions, so only the symbol of a sollution could possibly come up.

The reason a different symbol comes up each time is because the symbol by the "correct" solutions is randomized. Look closely at the list on the right when you refresh. The symbol by Nine will always be the correct symbol that comes up, because that is one of the possible outcomes of that math trick.

Very simple...
Value of two digits less Sum of these 2 digits = 81 or 72 or 63 etc (table of 9)...
Say digits are x and y.
The two numbers are: 10x + y
The sum of the two digits: x + y
The value of the digits less the sum of the two digits:
(10x + y) - (x + y) = 10x + y - x - y = 9x.
and "9x" is the table of nine. (notice the annulation of "y")...
So, the symbol table will have the SAME symbol for ALL the values of table 9 (9, 18, 27, 36, 45, 54, 63, 72, 81).
Since the table refreshes at each trial, you have a new symbol each time, and the illusion is complete.
