...have to have ONE central character? I mean, the greatest books and movies of all time seem to always have a main hero character. Granted, they have amazing supporting roles as well.
So I'm asking this:
How do you define a main character? A protagonist?
Are there any specific examples of a movie or book that doesn't contain a clearly defined main character or hero?

Yes. The OtherLand series by Tad Williams has, I think, 5 main characters and each has her/his own story along with the central story.

All good stories need both a protagonist and an antagonist, or there's no conflict. Without conflict, you have Barney--you know, I love me, you love you--or is it I love you, you love me? This kind of thing can't be read past the age of three. Every good book, play, story also needs a subplot, unless you're reading a school textbook. In the end, everything gets tied together. Someone wins and someone loses--and someone else disappears into the forest.
