They help radiate the heat and soak up some grease when foods drip. I have used my gas grill with and without them and did no harm.

It depends on the grill...some are made for them and some simply have what they call "flavor bars" that require none..if you will e mail me thru my profile and give me make and model number of it..I will happily find out for you
