If they are fancy Goldfish, they will get 8-12 inches and you could only keep one. Common or Comet Goldfish get up to 2 feet long, so that would be unacceptable. They may or may not go after the Shrimp.
Also, the employees at Petco and Petsmart rarely have any idea about anything regarding fish. If you are going to call a store, call a FISH STORE, not a pet store. And never rely on information gleaned from chain stores.

It should be okay, as long as you have a 55+ filtration while they are under 4", a filter with a gpa rate of 200+ gallons would be required when they hit adulthood. Also, not all types of goldfish can be in a 29 gallon. Only the fancy varieties such as
-fantails
-black moores
-vieltails
-bubble eyes
-pom poms
-orandas
Basically any goldfish that doesn't have the goldfish body and isn't called a
-comet
-shubunkin
-or those 5-25 cent feeder fish that are actaully baby comets that grow to be 12+ inches
Fancy goldfish grow to be 6-8" usually. As for the ghost shrimp, they probably will be te by adult goldies, but will be fine with them as they are little.

Your 4 inch goldfish are already to big for a 20 gallon aquarium. And yes the ghost shrimp are disappearing because of the crayfish. You need a much larger tank for your goldfish.

Yes, but ghost shrimp don't grow very big, and when i kept ghost shrimp and goldfish, the goldfish ate the ghost shrimp.

depending on the type of goldfish, but really goldfish should have a 55 gallon.
But if your going with this set-up, the goldfish better be fancys and not singled tailed.
Also make sure their is a good filter system.

Goldfish need 50 gallons of water to reach there full potential size. It will do for now but you will need to upgrade in the future. The goldfish may eat the shrimp when they get bigger.

There shouldn't be a problem with that, but if you need any information about fish compatibility and food, territory, etc..then you can call a local pet store and ask them. I usually call petco or petsmart.
