Because they can do several "takes" and keep the best the one. Also, a lot of care can be taken to balance the sound quality, and there are "effects" like echo, reverb and chorusing that can enhance the voice and make it sound better than it really is. Also, each instrument is usually recorded separately so there is a minimum of unwanted noise getting into the recording. Then a lot more time is taken to "mix" all the instruments and voices so the best possible balance can be achieved. It usually takes several hours of recording and mixing time for one three minute song. The first time I was in a professional recording studio, I was totally surprised how much time it took just to mike the drum set; a mike for the tom toms, another for the bass drum, another for the snare, mikes to pick up the cymbals.

A lot of the same things can be done in concert with a really good sound system, but there are certain limitations. For example, every venue or concert hall is going to have different acoustic qualities from other places. Maybe the singer can't hear his or her own voice as well as they would like. Maybe there are problems like feedback, unwanted echo and so on that the sound technicians have to constantly fix to get a good sound. Sometimes there are unexpected equipment failures, like cables or microphones that suddenly stop working. Also, there is "bleeding" of sound like the drums being picked on the vocal microphone which isn't really supposed to happen; but it's not as easy to control as it is in a recording studio. Another thing is, if they make a mistake, they can't do it over again.

Songs on a CD are practiced a million times and sung a million times before they are put on CD. A CD is the work of perfection and is completely editted. In a concert, it is raw singing--mistakes and raspy voices will be heard because it is not editted.
