Using the simple law of gasses, PV = nRT, the pressure is increased dramatically, causing the pressure to go up proportionally (on the order of hundreds of degrees). The heat is dispersed, and once the compressed gas reaches room-temperature, the pressure is reduced to normal, causing an extreme drop in temperature, crystallizing the CO2. The small crystals are then compressed into blocks or pellets.

If you turn up-down a gas container which has Carbon dioxide in it (it means that the valve becomes down) and you open the valve, after a while you can see the freezed CO2 comes out like snow crystals.

You can either cool the gas to the sublimation point or pressurize the gas until it becomes a liquid, and then cool the liquid. Take your choice.

Carbon di oxide is stored under high pressure so that it leads to change of state ie., it undergoes sublimation.
