Cosmology is the study of the history and evolution of the universe. For example the big bang theory, the evolution of the universe from its earliest moments to the present universe as we see it, and how it will change into the future. Cosmologists are theoreticians that create and test models of the workings of the universe. As far as a career - the route would be as an academician in the Physics and Astronomy department of a major university. You'll find them working in an office with their major tools being mathematical theories and very capable computers. You would typically not find a cosmologist in an observatory.

This is different from astronomy (the observational study of the current universe), and astrophysics (the study and understanding of the physical mechanisms that drive the universe, for example the physics involved in the formation, life and death of stars).

Cosmologists typically use radio, microwave, visual, and x-ray telescopes to study the nature of the universe, and try to learn why it is the way it is.

What is the age of the universe?
What is the size of the universe?
How much mass is in the universe?
Is there lots of mass in the universe that we can't see?
Will the universe expand forever, or will it eventually reverse and smash together again?
What happened at the very beginning of the universe?

These are the kinds of questions that cosmologists deal with.
